Zucchini bread
Ingredients3 eggs
2 cups sugar 2 cups shredded zucchini 1 cup vegetable oil 2 tsp vanilla extract 3 cups flour 1 tsp salt 1 tsp baking soda 1 tsp baking powder 2 tsp cinnamon 1/2 tsp nutmeg 1/2 tsp clove 1 cup chopped pecans Chai-InspiredReplace cinnamon, nutmeg, & clove with:
1 1/2 tsp cinnamon 1 1/2 tsp cardamom 1/2 tsp ginger 1/2 tsp allspice |
MethodPreheat oven to 325˚ F. Grease and flour two loaf pans.
In a large bowl, beat eggs. Add sugar and mix well. Stir in zucchini, oil, and vanilla. Add flour, baking soda, baking powder, salt, and spices and stir until combined. Stir in chopped nuts. Pour into prepared pans. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Let cool in the pans for 10 minutes. Remove to wire racks and let cool completely. Makes 2 loaves. |
