Dad's Chocolate Pudding Cake

1 cup all-purpose flour 3/4 cup sugar 2 tbsp cocoa powder 2 tsp baking powder 1/2 tsp salt 1/2 cup milk 2 tbsp oil 1 tsp vanilla Pudding 3/4 cup packed brown sugar 1/4 cup cocoa powder 1 3/4 cup hot water 1/2 cup chopped pecans (optional) |
MethodPreheat oven to 350˚ F. Grease 8-9 inch square pan.
Combine the dry ingredients for the batter in a medium bowl. Stir in milk, oil, and vanilla. Pour batter into prepared pan. In a medium bowl, stir together the sugar, cocoa powder, and hot water for the pudding. Pour over top of the batter. Sprinkle chopped pecans on top. Bake for 35-40 minutes, or until center is almost set. Let stand for 10 minutes. Serve warm with vanilla ice cream. |
