Surprise Muffins

3/4 cup milk 1/2 cup vegetable oil 2 cups all-purpose flour 1/2 cup sugar 1 tbsp baking powder 1 tsp salt 1 tsp vanilla extract approx. 12 tsp of jam or apple butter |
MethodPreheat the oven to 400˚ F. Grease or line 1 muffin pan.
In a medium mixing bowl, stir together the flour, sugar, baking powder and salt. In a second medium sized bowl, combine the egg, milk, vanilla and vegetable oil. Make a "well" in the dry ingredients and add the wet ingredients to the well. Stir until the mixture is moist. Fill the muffin tins about halfway. Drop 1 tsp of jam or apple butter into each muffin. Spoon more batter on top so that each cup is about 2/3 full. Bake for 15-20 minutes, or until golden brown. Let cool slightly, then remove from the pan. Serve while warm! Makes 1 dozen. |
