Peppermint Tassies
Ingredients1/2 cup shortening
1/2 cup butter 1 cup sugar 1 egg 1 tbsp milk 1 tsp vanilla 3/4 tsp peppermint extract 3 cups flour 1/2 tsp baking soda 1/4 tsp salt Red and green food coloring 36 chocolate kisses, unwrapped |
MethodPreheat oven to 350˚ F.
In the large work bowl of a mixer, cream together the butter, sugar, and shortening until light and fluffy. Add the egg, continue to beat until well mixed. Mix in the milk, vanilla, and peppermint extract. In a medium bowl, stir together the flour, baking soda, and salt. Slowly mix dry ingredients into the large bowl, a little bit at a time until fully incorporated. Divide the dough in half. Mix red food coloring into one half, and green into the other. Roll dough into 1-inch balls. Place on baking sheets 1-2 inches apart. Bake for 10-12 minutes. Remove from oven and let sit on the baking sheet for 2 minutes. Press a candy cane kiss into the center of each cookie. Transfer cookies to a wire rack to cool completely. Makes 3 dozen. |
