Gingerbread
ingredients1 1/3 cup flour
3/4 tsp cinnamon 3/4 tsp ginger 1/2 tsp allspice 1/2 tsp salt 1/2 tsp baking powder 1/2 tsp baking soda 1/2 cup packed brown sugar 1/2 cup shortening 1/2 cup boiling water 1/2 cup molasses 1 egg |
MethodHeat oven to 325˚ F. Grease and flour bottom and sides of an 8 or 9 inch square pan.
Beat all ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 3 minutes, scraping bowl occasionally. Pour into pan. Bake 30-40 minutes or until toothpick inserted in center comes out clean. 9 servings |
Lemon Sauce
Ingredients1/2 cup sugar
2 tbsp cornstarch Pinch of salt 1 cup hot water 2 tbsp butter 2 tsp lemon zest 2 tbsp lemon juice |
MethodIn a medium saucepan, combine sugar, cornstarch, and salt. Stir in water.
Cook on medium heat until mixture boils and turns clear and slightly thickened. Stir in remaining ingredients. |
