Baked Oatmeal
Ingredients1 cup milk (cow, coconut, almond, soy)
1/2 cup brown sugar 1/2 cup Greek yogurt, plain or vanilla 2 eggs 1 tsp vanilla 1/2 tsp salt 1/2 tsp cinnamon 1 tbsp baking powder 3 cups rolled oats 1 cup fruit (diced apples, dried cranberries, raisins, craisins—go crazy) 1 cup chopped nuts |
MethodPreheat oven to 350˚ F. Grease square baking dish.
In a large bowl, combine milk, sugar, yogurt, eggs, vanilla, baking powder, salt, cinnamon and oatmeal. Mix well. Fold in fruit. Spread mixture in the baking dish. Sprinkle with cinnamon sugar. Cover and refrigerate overnight or at least a few hours. Bake, uncovered, for 30-35 minutes. Serve warm, topped with vanilla Greek yogurt, more fruit, and a little cinnamon sugar. |
