Granola Gold™
Ingredients2 cups raw almonds
1 cup raw cashew pieces 1 cup coconut 2 cups rolled oats 1/2 cup sunflower seeds 1/2 cup pepitas 1/2 cup flax meal 1/4 tsp salt 1/4 cup coconut oil 3 tbsp honey 2 tbsp maple syrup 2 cups dried cranberries 2 cups raisins |
MethodPreheat oven to 300˚ F. Place parchment on two jelly roll pans.
Combine nuts, seeds, coconut, oats, flax, and salt in a large bowl. Combine coconut oil, honey, and syrup and microwave for 30-40 seconds to dissolve coconut oil. Pour over the nut mixture and stir to coat. Spread granola on the prepared pans and bake for 1 hour, removing it every 15 minutes to stir and rotate the pans. Remove from the oven and let cool. Stir in dried fruit. Makes about 8-10 cups. |
