Lemon Bars

1/2 lb unsalted butter, room temperature 1/2 cup granulated sugar 2 cups flour 1/8 tsp salt Filling 6 extra large eggs, room temperature 3 cups granulated sugar 2 tbsp grated lemon zest (4-6 lemons) 1 cup fresh lemon juice 1 cup flour Powdered sugar for dusting |
MethodPreheat oven to 350˚ F. Grease and flour a 9x13 baking pan, or line with parchment paper.
For the crust, cream the butter and sugar until light in the bowl of an electric mixer. Combine the flour and salt and, with the mixer on low, add to the butter until just mixed. Dump dough crumbles into the 9x13 pan, and press down evenly, building up a 1/2 inch edge on all sides. Chill crust. Bake the crust for 15-20 minutes, or until lightly browned at the edges. Let cool. For the filling, whisk together all ingredients. Pour over crust and bake for 30-35 minutes, until the filling is set. Let cool to room temperature. Cut and dust with powdered sugar. |
