Creamed Corn
INgredients3 tbsp flour
1/2 tsp salt 1/4 tsp paprika 1/4 tsp dry mustard Pinch of cayenne pepper 3 tbsp butter 1 small green pepper, chopped fine 1/2 onion chopped fine 1 cup milk 2 cup fresh, frozen (thawed) or canned drained corn 1 egg yolk, slightly beaten 1/3 cup buttered bread crumbs |
MethodPreheat oven to 400˚ F. Butter a 1 1/2 qt. baking dish.
Mix flour, salt, paprika, mustard, cayenne pepper together; set aside. Melt butter in a skillet, add green pepper and onion, and cook until soft. Stir in flour mixture and cook, stirring and smoothing, for 2-3 mins. Add milk, stirring constantly, and bring it to the boiling point. Stir in the corn and egg yolk. Spoon into the baking dish and sprinkle with the bread crumbs. Bake for 25 minutes, until browned and bubbling. |
